Leg of Lamb

Quark koek (Cottage cheese Cake)

This Cake looks and tastes a bit like soft moist bread its very nice especially when Raisons or sultana are added.

You will need:

50 grams or margarine
8 Table spoons of sugar
3 eggs
Vanilla Essence
1 Kg of Full Cream Cottage Cheese
2 table spoons of arrowroot
2 table spoons of Semolina
Juice of one lemon

Mix all of the above and work into a smooth mass.

Butter and crumb a bread loaf tin and fill.

Preheat oven to 120 degrees Celsius.

Slide into the oven ONE UNDER the middle shelf of the over (near the bottom)

Bake for one hour.

This cake can be enhanced by the addition of small quantities of currants, raisons, shredded walnuts, sesame seeds, poppy seeds, shredded apple or coconut. Choose from these additives, according to consumers tastes.

Leg of Lamb

This is a Dutch style roast lamb, the difference is that the meat melts on your tongue and tastes delicious.

You will need:

1 Large casserole dish
1 Leg of lamb to which will fit into the casserole dish, include the bones as they add flavour.
2 Large onions - chopped
2 Cloves of Garlic - chopped (Cut small holes into the meat and insert the garlic)
1 Large (red) capsicum - chopped
2 Bay leaves - Place these under the meat in the dish
1 Teaspoon of each of Rosemary, Paprika and pepper
1 Tablespoon of Soy Sauce and Westershire Sauce
Half a glass of red wine (Optional)
The juice from 1 lemon

Place the leg of Lamb in the dish (you may need to cut the joints to make it fit) on the bay leaves and include the bones.
Then fill the dish with water to a depth of about 40%. Add all other ingredients.

Place in the center of the oven (1 under the middle shelf).
Heat oven on full power until liquids start to boil, then simmer at 150-200 degrees F (simmer) until the meat is cooked.

If prepared correctly, the meat will fall of the bone and be so tender that it will "melt" on your tongue. Enjoy!
